Inventory values do not include "unavailable product".

I have a brick-and-mortar mattress store on Shopify POS that I just went live with in December. When trying to get EOY inventory value figures I was baffled to find reports did not include "unavailable" inventory counts. I put all of the floor models in the unavailable category, so it does not show as available to a customer. Furthermore, inventory reports include a negative amount for products sold but are not in stock and are on order or need to be ordered. Is there a way to see the simple report of physical on hand inventory that anyone is aware of? 

Unfortunately, Shopify has decided it no longer needs to provide customer service other than online research references which I have scoured for no solution.
