Hello,

I want to make shop in your platform. I have a few question about your offer.

I want to make global shop. So Can I add US Dollar and Euro as currency for payment ?

The next question. In Europe are various VAT rates. It is  possible to add a plugin which will increase the amount of the product with VAT ? If the customer indicates that he is from the United States, his amount will not change. However, if a customer from Great Britain wants to buy a product, the price will be 20% higher, because that's the amount of VAT.

Some great questions and I hope I can offer some help.

Shopify supports multiple currencies on each store with the exception of the checkout. You can manually add a dropdown menu to toggle between currencies using this guide.  Or you can use an app for this too if you like. A great free option is: Best Currency converter by Grizzly Apps. 
With regards to the checkout, this can only be in one currency, and will revert to the original currency that you have selected for your store upon request for payment. However, you can explain this to your customers by adding a note on the checkout page via this guide here. 

For taxes, these can be set based on the desitinations that you have added to your shipping settings. As soon as you have done this, you will then see these options appear in the tax section of your admin (Admin > settings > taxes). We have a guide to help you configure each of these here. These will then adjust the amount of tax charged at checkout, depending on where the order is being sent to. 
You can add custom tax rates to certain regions, products or collections if you like too and we have a specific guide for doing so here. 

However it would be best to check on the exact rates that you should be charging per location with an accountant, or professional advisor to ensure that you have the most up to date info.

Which means it doesn't really support multiple currencies.

Also, if you make the necessary customizations to have your store display prices in multiple currencies except at the checkout, then you will never be able to receive technical support on theme issues again, because you have implemented an "unsupported customization."

The display of multiple currencies and conversions is possible only. Though another option which you both may like to consider would be to create a second store and redirect your customers to the correct store based on their location. A common app used for this would be Geolizr, though there are many to choose from here. This would allow you to then use separate currencies at the checkout. 

In terms of customizing your theme, unsupported customizations cannot be carried out by our theme support, though attempting such customizations from our guides would not void your 60 minute free design time for any additional customizations which are supported.

A handy tip before making any customizations to your theme would be to create a back up in your admin.  You can also roll back certain theme files to their previous versions too.
