Financing, tax rates, and accounting
We have a small retail store in North Carolina. Items have various tax rates though I dont find any information on establishing multiple tax rates. Creating an override with each order is absurd and not a viable solution. Does anyone know how to set up new tax rates that can be applied to specific products manually?

You can use tax overrides within Shopify to set individual tax rates on a collection-by-collection basis, and won't need to do this for every order you receive. If you have a collection of products you need to set a specific tax rate for, you can do so by heading to Settings > Taxes in the Shopify admin and choosing the add tax override option for the country or region in question. You can then select the collection you wish to add the override for and set the appropriate tax rate:
You can hide the collections from your online store or other sales channels so that they are not publicly viewable and are for tax purposes only, and if you have a single product that needs an override, you can create a collection with just that product included in it. This should allow you to set all the appropriate tax rates for the products in your store that require a tax override. Tax overrides can also be added to shipping rates, if needed.

Hey there! Also in NC and trying to figure out how to handle Meck counties preprared food tax as it is an additional county tax for food. Their solution of doing an override is a poor choice since it does it state wide and not on a county level. Did you ever find a solution to your problem as it is pretty close to my own?
