Shopify Pay Fees are hidden?

How does a payment processor get away with hiding processing fees?  There is no report that can be run to show the fees by order in a month, you have to download EACH AND EVERY PAYOUT individually to get this data.  Is this even legal? Doesn't a financial institution have a fiduciary responsibility to report the fees they collect each month?  

Such nonsense. This is Accounting 101 and every single Shopify seller needs this data.

go to Finances-> Payouts->Transactions

Each order with the associated fee is listed

That's not even a menu option I can follow. There is no "payouts" menu??
