Financing, tax rates, and accounting
I'm not sure if the details are complete so feel free to ask any questions.
All of a sudden, Shopify has stopped collecting sales tax made to the shipping region of Illinois. It used to collect sales tax previously, but not anymore. Despite there being sales from this state.
Can anyone let me know why is this happening?

I do have a couple of questions for you to help determine what's happening with the tax settings on your store. Is your business operating from Illinois, or does the business have a nexus in Illinois? Are you seeing taxes missing for the Online Store, the Point of Sale, or both?
In order for taxes to be charged to customers with a shipping address in Illinois, the state will need to be added to Settings > Taxes as a physical presence. As an origin-based state, taxes will only be charged to customers in Illinois based on the zip code of the business's physical presence in that state. Here's a screenshot from my test store to show you what that could look like:
