Why is sales tax charged on non-taxable items in Washington State?

Per Shopify's request, I have reviewed all products and assigned them to Product Categories. I have assigned all teas to the Tea & Infusions product category which should be non-taxable. However, since doing this my Washington State customers are being charged sales tax on these items.  How do I correct this before it becomes an even bigger headache?

This is an accepted solution.

I opened a support chat and was told product variants do not inherit the tax or non-tax status implied by the assigned Product Category of the parent product.  Silly me for making a false assumption. I used the product edit feature, chose the Charges taxes column, and updated all variants. Going forward sales tax on orders should be correct. I've hand-calculated pending orders and captured correct amount.

Adding:  Once we assign items to Product Categories there is no option to over-ride the taxable status.
