There is no change to how PayPal button is rendered. We do not foresee any impact to CheckoutUI extensions.

Thanks for your reply Timama. Currently express payments don't support checkoutUI extensions no? As it won't inherit the required elements. I know ShopPay does support checkout UI.
We have two Shopify stores. One of our stores has been migrated from PayPal Express to PayPal Wallet and the other store still lists PayPal Express as the method of payment. Are we to assume that our other store has not been migrated to PayPal Wallet yet and this will happen soon?
Is there any way to continue using PayPal Express rather than PayPal Wallet as we prefer to have our Paypal transactions deposited into our Paypal business account rather than our bank account. This migration has caused confusion on the backend for our billing department.

We are migrating shops in batches. The shop that has not been migrated will likely get migrated post holiday season. If you can DM me your shop details, I can confirm.
We will be migrating all eligible stores to the PayPal wallet on Shopify Payments. If there are questions we can help answer for the billing department, please let us know.

Does PayPal Wallet make use of and/or require our existing PayPal account credentials? Our PayPal account has a monthly service fee which was pulled from our balance, but now there are no incoming funds to cover it, since we have used it exclusively for Shopify PayPal Express.
The PayPal Wallet on Shopify Payments does not use your existing PayPal account credentials. Your Shopify Payments account credentials are used to create the PayPal Wallet. The account you have with PayPal for PayPal Express is not linked to the PayPal wallet account.
Orders that use PayPal as payment method & are placed after the migration will not appear in the PayPal Business Center. You will need to use Shopify admin to manage payouts, disputes , refunds for those orders. Note - orders purchased with PayPal Wallet will remain eligible for PayPal Seller Protection.
You can continue to manage payouts, refunds, disputes for PayPal Express orders via your PayPal account. Once you have serviced these orders fully, you may not need to access the PayPal account any more.
