Order API - Processing Method and Payment Gateway

Hi everyone, 

Now I have an app and it has a feature that collects payments of orders from Shopify. But I don't know how to categorize the payments correctly. 

Here are my questions:

Question 1: Using Processing Method or Payment Gateway? what is better?

OR

- Question 2: Do you know what payment gateways will be categorized in what processing methods. 

I ask this question because sometimes, direct providers are still categorized in processing method "Check out. Is that right?
