I would like to create a one-time subscription discount for that person but with a limited validity time of only 48 hours from the time they receive it.

But you can create one like that in Shopify > Discounts, and send the customer an email with the coupon code

You can use flow app which will check the the product I’d in order and create a discount which will have the expiry of two day later and for one time use.

or you can create a custom app which will do the same as Flow app is free for above Shopify basic plan.
