The "vendor" field on individual product pages is simply an organizational label. You don't actually have to set a vendor (or show the vendor on the website). It's just there if you want to use it, for more organization. If you have different brands of products on your store, you'll usually put the brand name in as the vendor.
Example: if you had 2 T-Shirt products, one by Nike, and one by Adidas, then "Nike" and "Adidas" would probably be what you'd put in as the vendors for each respective product.
