I'm running a small grocery store, and I'm unable to sell certain items online because they are sold by weight, not by the each, and it's too difficult to hit a specific weight (i.e heads of cauliflower). I'd like to have the items available for customers to browse, and see they're in stock at the store, but not be able to purchase online. Any suggestions? Thank you.

Create an alternate template for those products that has the block|section for the buy-buttons disabled/removed.
If you do not care about the shopify inventory of those retails products then just set the inventory to zero and turn on inventory tracking to prevent sales.

For extra preventions at every step in the order process:
Shipping - either make the weight of the product astronomical so no shipping profile applies to it, or create a shipping profile just for those retail items that has no shipping destinations.
Post checkout - An automation in shopify-flow to tag/reject any orders that may somehow contain an invalid retail only item.
