I am looking for a way to offer 1 item coupon codes. Like, a customer may order several items and they could get the discount on the highest dollar item. "50% Off any 1 Item".

Great question! The best way to set something like this up would be with one of our apps from our app store. I can list a few of them below. All have similar functions of offering discounts for certain product/cart conditions and come with free trials.
