In order to introduce a new item, I would like to offer a discount on a customer's entire order if the order includes the new item. Is there a way to do this? Would a "Buy x, get y" work, or is that only for single items?

I understand you're looking to introduce a new item and you'd like to incentivize customers who purchase this item by offering a discount on their entire order. While you can use automatic discounts to automatically apply an offer, the Buy X Get Y discount type would only be able to apply the discount to the following item and not to the entire cart. That being said, you will also want to take into account how many items customers would be adding along with the new item, so discounting the entire order could pose potential issues. Instead, offering a percentage or fixed amount discount type might be more suitable for introducing a new product - you can create an offer that incentivizes customers into purchasing the new item, such as offering a Buy One Get One or Buy One Get % off the second one.
Alternatively, if offering a cart discount when customers includes the new item in their purchase is something that you must have, then you can try using a third-party discount app. For example, Automatic Discounts & Gifts allows you to create offers like Buy X Get Y + 10% or 10% off A + 15% off B.
