Email Automation for Back in Stock Items

Currently, we are using a 2.0 theme, and it has a functionality for users to leave their email when an item is out of stock but they would like to be notified when it comes back in stock.

What happens that we them recieve an email prompt that a user has indicated interest. However, other than that, it's a manual process outside of shopify to track these requests, and to follow up when the item is back in stock.

 

Wondering if anyone would have any idea how to automate this using Shopify Email? Ideal case would be that the system automatically sends and email to these users, when the item is put back in stock
