Have got our collection on google shopping. However, the link is taking customers to variants that are out of stock. An example follows.
The customer cannot select a buyable variant until they click on show out of stock and then click on variants.
I am sure this will not be a good shopping experience.
How do I edit it so that out of stock variants are hidden and customers do not land on them? Or the google app does not think out of stock variants are in stock.

Thank you for reaching out to the community about that. By default, the product page will land on whichever variant is listed first in your admin. However, you can input some code snippets into your theme in order to hide variants when they become sold out. What theme are you using?

To add to Shopify's Staff answer, please note that hiding add to basket buttons or products is a policy violation. A user must see the same exact info from the ad, that is clicked on to the product landing page. More info: https://support.google.com/merchants/answer/4752265?hl=en
With regards to what to show. If a product is out of stock, Google will not advertise this on the Shopping channel, there may be some delay between data feed updating and Google Ads. Mostly 2 to 3 hours.
You can double check the info is correct by going to Google Merchant Center > Products > All Products > click on the specific products.
