How can I segment unsubscribers in Shopify Email?

I'm currently using Klaviyo but would love to move over to Shopify email permanently.

I want to make sure that it is possible to send emails allowing people to opt out of events such as Father's Day/Mother's Day using Shopify Email and that this will then save them as a segment but I can't see a way of doing it.

I've set up an email and I've got the page saying 'you've successfully unsubscribed', I just can't work out how to get the unsubscribe button within the email to group the unsubscribers into a segment - can can anyone please help explain how to do this?
