After 18 months I believe its time to work on my stores SEO (I know, I should have done it sooner).
Im just wondering if anyone has any tried and tested methods to getting backlinks to your website. My website is a fitness clothing/ gym apparel / sportswear business.
I know there are many buckets to try and fill for better SEO but could anyone give me an insight to some methods I could do myself. Last month we begun blogging, which I think is a step in the right direction.

Yes, I agree backlinko is a trusted source of backlinking. While I do not recommend ads as backlinking strategy [backlinks as default should be giving you credits for the years to come, and ads will stop once you stop paying]. What I recommend is connecting with your target audience and be present in the places where they are active [discussion boards, members clubs, advice forums] and give your advice there, posting regularly, building your authority and posting links to your site, if relevant. Optomize your content, so it's shareable, blog regularly and be active on social media. These are the best ways to earn relevant becklinks.

To get some relevant links you need to do some research on web and find out the related blogs, forums and take part in discussions over blogs via blog commenting, and in forums as well. there has been already a lot of strategies mentioned (guest blogging, checking backlinks of your competitors, sharing your blog posts on social media, etc.).
How about connecting with some active bloggers and influencers who are interested in fitness (and could be a fit with your brand)? You can also check fitness studios you think could be willing to cooperate with you (sharing your blog posts, including your brand/product in their blog posts, recommending your products to their customers).
If they find your product/brand interesting and think that for their audience/customers there's a fit and that they might benefit for it, they might be willing to cooperate with you. I have some positive experience with this, however, it takes quite a lot of time to find the right bloggers/influencers/websites who will be willing to invest time in discussing the cooperation with you and take further steps.
Btw. it doesn't mean that you have to pay them for it (I don't mean this kind of cooperation), what worked for me was that if you explain the benefits for them clearly and they think there's a fit, they will be happy to cooperate with you.

To my personal experience, I am creating backlinks using the ahrefs tool. Using ahrefs you can do competitor backlink research and you can also get backlinks where your competitors are taken backlinks.
