I hope this is the right forum to ask.
So we recently carried out some market research on our potential customers shopping habits and it turns out that almost everyone searches for terms like, "local vegan candles" or something like that.
Given that we're an online store, we are presumably not going to show up if anyone in my town looks for local candle makers. Is there a way for us to appear as an online business in local search results?

Yes, i would advise you to add @LocalBusiness with the Schema Markup (JSON-LD), you can easily create the Schema Markup with Technicalseo.com/tools/ and then copy/paste it into your theme.

#1 claim your gmb/ google business profile, connect with your current website in your profile
#2 have 'local address' and physical store address and how to get there, with google map in your webste
#3 build backlinks with your targeted kw which has local kw
#4 add more 'local physical' related content/ words/ sentences to your shopify website

Yes, there is definitely an authentic way to come up on Google Maps for showing your business in your local town or in the local results.
Note: If you have your physical store or location, then this process can be helpful
