When I edit the page title in the 'Search engine listing preview', why does that show as the H1 on the page instead of the 'Title' section of the on page copy? Is there a setting to resolve this, or is it an issue with the theme?

It will be how your theme is coded. There are two different page titles.
The SEO page title is coded {{ page_title }}
The page 'Title' section to just show Extinguishers as per your image would be coded {{ page.title }}
You will have to look through your collection template liquid file that is used for this collection to find it.

Your page title always be in <H1> tag, it is good for SEO.
While there is no technical rule to “only use one <H1>” header on a single page, it is more towards the purpose of the header tags and it is better for your site to try and limit their usage.

Appreciate the response, but I don't think you understood my question. I'm well aware how heading tags work. However I'd like a different H1 rather than duplicating the page title.
