Hello there,
The images on my page do not use Alt text, for example, I want this type of page Alt text. Every page and image on my website contains some SEO. They are not being tagged by my SEO. Even though I have checked and modified the web pages over and over again, the reason remains a mystery. Can this be fixed? Does my alt text need to be hardcoded? What is the process for doing it in JSON in that case?

I don't know what you mean by "they are not being tagged by my SEO." Do you mean Google is not reading the alt text of images? How are you determining that?
