Submitting separate sitemaps for different countries or regions is generally recommended when you have subfolders targeting specific locations. Submitting country-specific sitemaps can help Google understand the structure of your website and its content targeting different countries more accurately.
When submitting country-specific sitemaps, ensure each sitemap contains relevant URLs to the respective country or region. This will help Google understand the targeted content and appropriately rank it in country-specific search results.
Additionally, make sure your website has proper hreflang annotations implemented. These annotations indicate to search engines the language and country targeting of each page, providing further signals for better geo-targeting.

Please could you tell me, will Shopify automatically do this thing for me? or I need to add the hreflang code by myself?
I found a answer from Shopify documents here:
Hreflang tags and meta tags are automatically created for every international domain or subfolder that you set up. Your sitemaps also include all published languages to help search engines detect the different languages on your store.

You only need to submit the main file, sitemap.xml, to Google for each of your connected domains and there's a couple of ways you can do that. After you find the sitemap, you can verify your domain(s) using the following methods:
