Just have a quick question. How many stores can you have open with one account?

I plan on joining up with a mentor but he's talking about making MANY websites

You can have as many stores on one email account as you would like, there isn't a maximum. What type of businesses are you planning to open?

Different trending products. So does this mean I need to pay $30 for each
store I open. Or, under my original plan, I can open a hundred stores? My
new mentor is kinda scaring me here. Haha

Yes, you will need to choose a plan for each of the stores you have within your one account. You are basically just using the same account owner email for all your stores but they are all individual stores.
