Checkout Extension how to update fields format

I want to modify the filed like city from text to select,   for example:

or can i delete the city field?

Does anyone have any guidance on how this would be done?  Or is it not currently possible?  Thanks

Checkout UI extensions are typically used to add in new functionality to the checkout, rather than removing existing features or fields - but it may be possible to achieve this by working with the purchase.checkout.shipping-option-item.details.render target.
