Hey @rohanrajpal  and @dillerdev . The shop details will typically be available in the shop object through both GraphQL and REST apis. 

With that in mind, currently the store's VAT number is not available. 

I'd love to know more about your use case for wanting to retrieve the shop's VAT number. I'd be happy to pass that on to our product teams to consider for future API releases.
