How do I pass consent from my headless page to checkout for personal Custom Event data?

I have headless landing pages and right now I can only push non-personal data through to the dataLayer for my GTM setup.  I want to pass information like email and name for those that opt-in on my landing pages. 

Whats the best way to do this? I am currently using the StoreFront API to build the checkout from the headless pages.
