Which parts are not self explanatory?
If you are not a developer basically it means those stores have custom/private apps setup.
https://help.shopify.com/en/manual/apps/custom-apps
And something is calling endpoints that have behaviors(fields) which are going to get removed.
https://shopify.dev/api/usage/versioning
So those parts of the custom apps will stop working next year if you don't fix them.
Typically if your not a developer and you didn't set those up then a developer you worked with did and they should be able to clarify what things are doing what.
If all of this is a surprise you need to work with someone to go over your businesses shopify usage and document what is going on.
