So basically I am going to set up a company in Brazil but in fact I live in Ireland and will be working and receiving in Ireland, is that possible?

It is certainly possible. But, if you are going to handle any goods in an EU country, you will need to have at least a VAT registration. And once the tax administration discovers that you are personally working in that country, they will consider you to have a Fixed Establishment and require you to pay taxes on company income in that country. And naturally full require full accounting.
