I've created an international store. I have the following setup I wan't to achieve and I can't seem to figure out how to do it.
www.mystore.com - UK Market, Pounds, English (done)
www.de.mystore.com - German Market, Euro, German (done)
www.pl.mystore.com - Polish Market, Polish Złoty, Polish (done)
www.eu.mystore.com - All other EU countries, Euro, English (can't get it to work)
If I create a market in settings, and add all the EU countries to it, and activate it, all the individual markets show down in the market dropdown selection in my store. I want users to be able to choose from 3 options: UK, DE, EU rather than all the countries UK, DE, PL, FR, [...], HU.
I feel it's achievable as https://eu.gymshark.com/ see's to have it working on Shopify, but I can't find any instructions on how to tackle this.

Yet all the countries in the EU market are separate in the picker, rather than having one option called EU (EUR).
