I would like to share some general guidance here, you can easily set up HS codes in Shopify under the product settings, and taxes can be configured based on the countries you sell to in the Shopify Taxes settings.

If you need help with the specific HS codes, I’d recommend reaching out to the carrier account manager of the shipping carrier you plan to use. They can offer the most accurate guidance for your setup or you could also connect with the export/customs department for international shipments assistance.
Shopify also suggests HS codes based on your product descriptions, and some carriers have this data published on their platforms too.
