Localization of metafields in standard shopify taxonomy

Hi,

I try to use the metafileds for allergenes which are included in shopify's standard but having trouble localizing its's values, since they are not localized by default. So in my german shop, the values of the metafields are displayed in english. Using the translation app I cannot change the text for e.g. "Nuts" in language "German (Global)", I can only change "German (International)".

But if i display the store, the english text remains:

So why is there German (Global) and (International) and how can I get my shop to use the International one by default? Or is there any option to change the original text of the metafiled which doesn't get localized by default?
