at the same time we always want to redirect non-www traffic to the www. domain in order to not have cookie issues in the cart as we noticed www.abc-germany.de and abc-germany.de do not share the cart?

Cal here from Shopify, thanks for reaching out to us. Are you looking to connect multiple domains to your Shopify store? Are they third-party domains? Who is your domain host?
Once you have connected your domains to the store, you can choose one of those domains to be your primary domain. Once the domains are all connected to the store, they will be redirected to the primary domain, and they will all use the same cart and checkout.

Hi again! If you are looking to redirect all root (non-www) domains to a primary www domain, you can do so by following the guide on setting a primary domain that I added in the above post. Here's a quick snapshot of an example:
This will ensure all domains that are linked to your store will redirect to the primary domain you have chosen.
I'm afraid that this wouldn't be possible on a single store. To achieve this you would need to open multiple stores for your different regions.
