is it possible to set up a shopify store shipping from EU to UK, USA and Australia with automated local sales tax (VAT) collection at destination?

HI Coolshoppe, 

That is basically how the native Shopify tax engine work. You need to set up taxation for the destination countries and the sales tax/VAT will be added or calculated inclusively (dependent on your settings)
