How is it possible that the product data differs between the admin view and an API query?
The only explanation would be that I'm not in the same product, but I can't identify that.
Have you made changes to these values recently? If so, there could be some caching issues at play here.

So, if you're referring to the browser cache, I don't think that's the issue. I also encountered the same problem in incognito mode. Are there any other "places" within Shopify where a cache could be cleared?
