Add extra information to fulfillment email before sending

Hi All

I'm hoping someone can help me with this.

I'm looking to add some information to the fulfillment email that goes to the customer, but it is information that will not be known until the email needs to go out.

So once a customer has placed an order, I need to advise them of the day its been scheduled in for delivery (all stock is pallet delivery) but I can't find a way of adding that information to the fulfillment email, and I don't want to have to send a separate email to them, as that will bombard them with too many emails.

If there a way of doing this? I'm thinking a text field in the orders section where I can add the date, and that gets added to the fulfillment email.
