Can custom delivery dates and unique processing times be set per product?

We are setting up our Shopify store in the United Kingdom, and we are actively exploring shipping options. I am keen to understand whether it is possible to configure custom delivery dates, each with its own unique processing times, for individual products using custom shipping profiles.

Any insights or guidance you can provide on this matter would be immensely appreciated.

JsRates offers full control and flexibility with defining your shipping rates - this includes defining custom delivery dates for individual products. You will need the carrier-calculates rates (CCS) enabled on your store to use this feature on the checkout page.
