Accepting credit cards, warehouses, and shipping and fulfilling orders
As I do not have a SSN or a specific date to when I will be receiving this. Is it possible to use a family or a friends SSN for the purpose of acting as the Shopify payments account representative? And after I receive my SSN, can this information be updated to myself as the account representative?
My second question: Can I use the same EIN and bank account details on multiple or separate Shopify stores for different business types? As long as these stores are all under my account.

The SSN/SIN requirement can vary depending on which country you are from - Canadian merchants (using Canadian Shopify Payments) will be asked to provide their SIN during sign up. If you do not wish to provide this, you may be subject to manual review of your ID and will likely need to upload photo ID upon request as an alternate verification method.
US merchants (using US Shopify Payments) are required to provide all 9 digits of their SSN as verification. There is no way to bypass this step. Using someone else's SSN will likely result in your store being flagged as a fraud risk and could result in a more in depth verification process as a result.
