Accepting credit cards, warehouses, and shipping and fulfilling orders
Our store needs the ability to add a confirmation step in checkout.
We need to add this seasonally, as temperature increases call for an acknowledgement from customers (it will save us hours and a lot of money).
I know that this can drastically reduce conversion rate, and that the feature is only available in certain countries as per this thread:

Does anyone know if Shopify can make a case for our store to enable this? (As was done in the thread above?) Or if there are any other workarounds we can utilize?

Yes its possible, we can add confirmation step right before customer proceed to checkout.
If this is not present in your settings this needs to be customised you can get back to me to discuss this further.

I know you've confirmed that you don't have this feature available on your store's settings, but just to make sure that we're on the same page here, are these the steps you've taken to check?
Scroll down on until you see the Order processing section, and tick the Require a confirmation checkbox, which should look like the image below.
To also clarify though, if this option is enabled, it will give customers an extra review step on checkout that appears after they've inputted their payment information. You can take a look at the image below for what this looks like on checkout.
I'd like to learn more about your use case to see if there are any other alternatives we can potentially look at, however – what sort of acknowledgement from customers are you needing?
The reason that I ask is because alternatively, you can also look into adding an acknowledgement or terms and conditions checkbox to your cart page, rather than on your checkout. This feature requires that customers check the terms and conditions box before continuing to checkout. If a customer doesn't tick the checkbox before clicking the checkout button, a pop up will prevent them from continuing.
If you're comfortable with coding, we have a step by step tutorial here on our Community Forums post on how you can implement this feature to your store's theme. Because this is an advanced tutorial however, it isn't supported by Shopify staff, but you can hire a Shopify Expert if you aren't comfortable following the steps in the tutorial.
Alternatively, you can also install a third-party app from our Shopify app store such as the Terms and Conditions Checkbox App, or the Agree Terms and Conditions App. Seeing as you mention you'll just need the acknowledgement to appear seasonally, perhaps installing an app would be better so that you can turn the functionalities off when required. Just a note however that these apps are made by third-party developers outside of Shopify. So if you have any questions about them I would recommend getting in touch with the app developers, as they are best equipped to answer app-specific queries.

Thank you for getting back to me! And thank you for sharing the options for a checkbox in the cart.
Our use case is a bit different, and since our checkbox will relate to shipping, we'll need the checkbox/acknowledgement in checkout near shipping options. We have a lot of local pickups, and don't want to disturb conversion having people check this box about shipping, if they're going to be picking up locally anyway.
Our use case is that when we ship our chocolate in the summer, it's prone to melt in the mail if the destination is experiencing hot temperatures. We need customers to acknowledge that we require 2-day shipping to such destinations. A great example can be seen in checkout at and-sons.com (image below):
I saw in another related thread, that Shopify was able to grant the ability to require the checkbox (as seen above in your Settings example) to a merchants account. Can you do the same for us? It will save us a lot of money, and help us continue to grow sustainably in the warmer months.

To confirm, the checkbox I showed from my test store's Settings page with the heading 'Require a confirmation step' will not give stores the ability to add a checkbox to their checkout page. It will instead allow stores to add a Review step to their checkout process – on checkout, this will look like the second image that I've shared on my initial reply. On this Forums post that you shared, my colleague Ryder also provided a video of what that Review step looks like on checkout. I'll link the video here too, for ease of access.
I saw in another related thread, that Shopify was able to grant the ability to require the checkbox (as seen above in your Settings example) to a merchants account.
On that same forum post you shared, it looks like Ryder is offering the user whether or not they'd like the 'Require a confirmation step' checkbox to be added to their Shopify admin, not the store's checkout page. So even if our staff member is able to add this to your store's Settings page, you still won't be able to add the checkbox on your checkout's shipping page. In order to achieve this sort of customisation on checkout, a store would need to be on the Shopify Plus plan.
For more context, because a store's checkout is a secured page, the source code isn't made available to be edited. This helps ensure that the information on checkout remains safe at all times for both merchants and customers alike. Even for stores on the Plus plan, there are still limitations on the customisations they can implement on their checkout page. Plus stores can, however, add a terms and conditions checkbox on checkout. We have a developer document here for best practices on editing the checkout.liquid

Which subscription plan is your store currently on?
If your store isn't on the Plus plan, the closest feature available at this stage is to add a checkbox within the cart page, as suggested in my initial reply.

It looks like the example I provided above (which is a Shopify store), is using a Plus plan utilizing a conditions checkbox feature; would you agree? From what I've learned from you, it looks like that's the only way they're able to include that functionality in the cart.
We're not on a Plus plan currently, it appears to be a great fit for companies much larger than ours.
If the only way for us to get this simple functionality is to upgrade to Plus (which I assume would cost much more than our current plan), it's disappointing that Shopify won't allow it for a smaller business using a more standard plan. This feature is crucial for our business in the Summer (since we ship food products that melt).
We DESPERATELY need a final review step for our store just like what's in your screenshots.
