Can we modify Stripe API on Shopify to add objects?

Hi !

I would like to know if we can modify Stripe API on Shopify ?

I would like to add some data on it. I know in the past I used checkout X and i got more data in Stripe than when i use now Shopify Checkout.

I need to add some: https://stripe.com/docs/api/checkout/sessions/object

(Stripe already told me I have to check with Shopify)
