Accepting credit cards, warehouses, and shipping and fulfilling orders
I need to change the shipping date estimates. I don't want them hidden completely - I just want to change the minimum and maximum for each shipping method. Does anyone know how.......I feel like I've tried everything

Great work on this one so far! You're absolutely looking in all the right places.
Since those estimated delivery dates come directly from the carrier, if you're finding that they're setting inaccurate expectations with your customers, our best option is to hide the date estimates entirely, as it's currently not possible to edit them from your Shopify admin.
If you do decide to go with this option, you'll make this change from exactly the page you've shown me here: your language editor (Online store > Themes > Actions > Edit languages). Simply enter a space into any field you would like to leave blank, as I've done below:
It's worth noting that this change will only apply to your current theme, so if you ever decide to change themes, you'll want to repeat these steps to remove the time estimates on your new one.
Please let me know if you run into any challenges making those edits!

How do we do this in the latest version of Shopify. The estimated dates are not accurate at all and will upset customers.
I have the same question. An order on Feb 19th with a one-day processing time showed the estimated arrival date as February 28–March 4.
The order was shipped today, Feb 20th, and tracking estimates it will arrive on Feb 23rd.
