We're using Paynamics as the payment gateway, and it is possible to enable or disable payment methods such as credit/debit cards, installments, and wallets for specific products?
do we need to use apps or codes

By default, Shopify doesn’t offer product-specific payment method controls—payment options are generally set up at the store level via your payment gateway. That means you can’t natively enable or disable credit/debit cards, installments, or wallet options on a per-product basis.
Here are a couple of options you might consider:
Check with Paynamics:
See if they offer any merchant dashboard settings that allow conditional display of payment methods based on product type or other criteria. Sometimes the gateway itself provides that flexibility.
Custom Solutions:
In short, without additional custom development or specialized apps—and unless Paynamics offers this in their settings—you won’t be able to control payment methods on a per-product basis out-of-the-box.
