Accepting credit cards, warehouses, and shipping and fulfilling orders
I have one collection of products called "Coffee" and I want to set a free shipping threshold of $35 or more (within the US). I have another collection of products called "Merchandise" for which I do not want to count towards the "Coffee" free shipping threshold (also free shipping is already priced into those items). Both those collections are fulfilled by different suppliers. I see that you can segregate shipping on the checkout form, and I understand how to set shipping rates, but I can't figure out how to exclude products from the free shipping calculation. What are my options? Does anyone have experience with the same type of thing? For example If I add $25 worth of Coffee and $15 worth of merchandise, the coffee gets free shipping even though it did not reach the $35 minimum.
@thisistheway , native shipping discounts doesn't let you choose collections to apply to.
I suggest you to try the Advanced Shipping discount in app Discount Bot. It lets you choose the conditions to apply or exclude collections and/or products. You can also restrict the discounts based on customer tags:

Hi Thisistheway,
Shopify's built-in shipping discounts are convenient but limited in flexibility when it comes to more complex scenarios like yours. As you’ve noted, it’s tricky to exclude certain products from free shipping thresholds natively.
What also complicates this is that there are two ways to discount shipping in Shopify: shipping profiles/rates and shipping discounts. Based on your post, it's not 100% clear which one you are using, so I'm going to assume you're using a discount.
Our app, Regios Automatic Discounts (4.9 stars, 47 reviews), offers a simple solution. Unlike other apps, we provide powerful customization options that let you exclude specific collections, like your "Merchandise" collection, from contributing to free shipping totals. Plus, it’s easy to set up!
I recorded a quick Loom video walkthrough tailored to your exact scenario: https://www.loom.com/share/1b3d77b993a944a9acc1271b134fa5a
