The following issue is related to Inventory.
I continue selling products after they are not in stock, which results in multiple pre-orders. I export the list of the inventory with all products that have 0 or fewer items in stock and use that list to place an order with my supplier.
I want to export this list weekly. I do not update the inventory every week though since the order from the supplier doesn't arrive so fast. I want to find a way to export a list only with products that became out of stock per week.
Example:
Product A has -10 stock. I export the list and place an order for 10 products. Next week, Product A will be purchased 5 more times. I export the list again and Product A has -5 stock, not -15.
Does it make sense? If there are any other ways to know exactly how many products became out-of-stock in a week, let me know.
The main idea is to know exactly how many new items on a weekly basis were purchased by clients as pre-orders and have to be ordered by me to the supplier.

Is your goal to export the list with products having zero or fewer in stock currently? If so, you can use the inventory list in Shopify and export it and then filter in Excel to items with quantity less than or equal to zero.
If you are looking for those that became less than zero during a period of time, Shopify wouldn't have a good way to do that. Our Report Toaster app could help in this instance, as we have an inventory history feature which we have used to help other clients with pre-order stocking.
