Headless Store with dynamic checkout buttons

Hello, I am building a custom headless storefront using Shopify Plus / Gatsby / Netlify. The customers current site includes a dynamic checkout button on the product page that allows the customer to purchase the single product instantly using either Shop Pay, Google Pay or PayPal.

So far I have research Google Pay, and know that I must load the Google Pay library independently from Shopify, but am unsure how to link a Shopify checkout to a Google Pay object.

It is my understanding that this is possible on headless and has been done before, but I cannot find any documentation anywhere on the actual implementation of this feature. Guidance would be appreciated!
