How can I change the delivery method name in order confirmation emails?

I would like the name of the delivery method to no longer appear when the customer receives an order confirmation email or for a shipping update. Instead of the expression "Standard ePacket: 11111111111" I would like to see only "Tracking number: 1111111111". I have to use words instead of variables I think. Can you help me?
