Accepting credit cards, warehouses, and shipping and fulfilling orders
I'm struggling to find a method for excluding certain products from a zone.
I'm selling in Australia but certain products cannot be sent to Western Australia. I've created two custom shipping profiles, one with 7 states and territories, and one with only Western Australia. I then added my entire product list to the main shipping profile with the majority of zones but cannot put the same product on multiple shipping profiles.
Let's say I have 20 products, 17 of those products will be available everywhere but 3 cannot go to Western Australia.
How do I set this up?

I'd love to help you with your shipping concern. The shipping profiles are specifically designed to meet the need of setting different shipping rules for specific products and locations, so you're on the right path. However, you just need to set them up slightly differently from what you've created.
Instead of adding different groups of products to multiple shipping profiles, the goal is to separate the groups of products and then add the shipping zones accordingly. To put it simply, this is how your shipping profiles should look:

Having found out recently, this actually isn't an acceptable solution because Shopify treats shipping profiles as 'sub-carts', so if a customer purchases a product contained in two profiles, the cost of their shipping is combined.
