How can I manage two delivery dates for my meal service?

Hi!

I manage a meal delivery service in Helsinki, Finland: https://www.fuelme.fi. Customers can select meals from a weekly rotating menu with delivery of meals on Monday and/or Wednesday. The order page was custom built, but the Shopify platform is still limiting this framework as it only recognizes one shipping date as does not recognize what days customers selects on the order page.

Do you have experience with two shipping dates based on product selection, either through Shopify or a Shopify app?
