Accepting credit cards, warehouses, and shipping and fulfilling orders
My customer said upon checking out, the option for using American Express was given. But I don't except American Express so I would like to know what changes I need to make so American Express is not showing up as an option for payment.

The ability to accept different payment options depends on the payment gateway you are using. Are you currently using Shopify Payments?
If so, you can disable American Express by heading to Settings > Payments in your Shopify Admin. From here, select Manage then deselect American Express from the payment options.
I hope that helps! In the meantime, I would love if you could provide the domain for your store to see what additional support I can provide.
I am using Shopify payments. And the weird part is, America Express is not selected in my settings. Never has been. It doesn’t make sense that the customer sees this as an option when it is not selected in my settings.

Taking a look at your store, I'm not quite sure how to add a product to my cart. I was able to select a product where I could choose a pattern, which redirected me to an external site: maggy55patterns.com. When at the checkout for this store I am able to see American Express as a payment option.
Is maggy55patterns.com also a store you own? If so, have you checked the payment settings for that account?
In the meantime, for bagmakersworkshop.com I recommend you add a logo! You can actually create beautiful free logos over at canva.com.
I only open purchasing capabilities at certain times, so most of the time making a purchase is not available. However there is a workshop on the site that is purchasable at this time, it is the Mara Clutch workshop.

Regarding the American Express issue, I did not see American Express listed anywhere in your checkout. Here is what I see at checkout.
What most likely happened, is the user experienced similar to what I did, and clicked through to one of your affiliate's checkouts which offer American Express.

Your ability to accept American Express would depend on your payment gateway. What payment gateway are you currently using?

You can disable the AMEX from you checkout by going to Settings > Payments in your admin and choosing Stripe. From there you should be able to toggle off AMEX.
