How can I show items as in-stock but only available for pickup?

Hey Shopify community, I can not figure this out..

I have some items I will ship, but most I will not.

I want to show those items are in stock but only available for pick up, I can't seem to do both.

Please help! It's been a year of not being able to offer those items!
