Great question, I'm happy to share some more information on how returns and refunds work on Shopify.
What I recommend doing first is reading over our help document all about creating returns:
This document has the steps on creating a return label if you want to provide that for your customer (please note this feature is available only if your primary location and customer shipping address are both in the US) and refunding the order.
