How do I stop shop pay and apple pay being options on the express checkout?

All I want is it to say 'Buy now', and then the shop pay and apple pay show up as options in checkout

Hello @lukafernada to begin with, the “buy now” button is regarded as a dynamic checkout button. To enable this feature you can easily just follow these steps-       1) Open your theme editor and select Product Page from the drop-down menu at the top of the page.
2) The next step is to navigate to the left hand side and select Buy Buttons

3) The final step is to select the 'Enable Dynamic Checkout Buttons.' option. 
I believe this would allow you replace those options with just the buy now button. Let me know if this works well enough for you.

No, it is already turned on. Turning it off will take it off entirely. The shop pay feature is overriding the Buy Now options
